Ingredients
2 flatbreads
1 boneless, skinless chicken breast, barbecued and shredded
1 peach, sliced
1/4 cup red onion, diced
1/3 cup barbecue sauce
1/2 cup shredded mozzarella
How to Make Barbecue Chicken + Peach Flatbreads
I just purchase premade flatbreads from the grocery store and spread barbecue sauce on top of each one evenly. I then top with shredded mozzarella, diced red onion, sliced peaches, and shredded barbecue chicken. They go in the oven for 8-10 minutes, and then they’re ready to be served!
How to Serve
These flatbreads pair perfectly with a simple salad and are the easiest summer dinner recipe when you don’t feel like spending a ton of time in the kitchen. We usually barbecue the chicken ahead of time with another dinner and then use the leftovers to make things even quicker!
How to Store
Leftovers save well refrigerated in an air-tight container for up to 3 days. Simply reheat when you’re ready to enjoy!

Barbecue Chicken + Peach Flatbreads
Ingredients
- 2 flatbreads
- 1 boneless, skinless chicken breast, barbecued and shredded
- 1 peach, sliced
- 1/4 cup red onion, diced
- 1/3 cup barbecue sauce
- 1/2 cup mozzarella, shredded
Instructions
- Preheat the oven to 400°F.
- Line a baking sheet with parchment paper and set aside.
- Spread the barbecue sauce evenly on the flatbreads.
- Top the flatbreads evenly with mozzarella cheese, diced red onion, sliced peaches, and shredded barbecue chicken.
- Bake in the oven for 8-10 minutes.
- Serve immediately.
The flavours here work so well together and compliment each other perfectly. Even Cole, who was a bit skeptical, loves this recipe and asks for it almost weekly. (update, now that H is eating solids, he is obsessed too and this has been a favourite of his too)
