I have made Peppermint Bark for as long as I can remember, but a few years back I started also making this Almond Pomegranate Bark. It’s so delicious and absolutely beautiful. It makes a lovely addition to any Christmas baking and it is exploding with festive flavours!

All you need is some butter, chocolate, almonds, and pomegranate seeds. The chocolate and butter get melted together and poured out onto a baking sheet lined with parchment paper. Top with almonds and pomegranate seeds and then refrigerate for at least a few hours to set. Once everything is set, slice it up into bite sized pieces and serve!

Ingredients

  • 1/4 Cup Butter
  • 2 Cups Chocolate Chips
  • 1/2 Cup Almonds
  • 1/2 Cup Pomegranate Seeds

Instructions

  • Line a baking sheet with parchment paper and set aside.
  • In a small saucepan over medium heat, melt the butter and chocolate chips together until smooth.
  • Pour the melted chocolate onto the baking sheet, using a spoon to spread evenly.
  • Top the chocolate with almonds and pomegranate seeds evenly.
  • Place in the fridge for at least two hours or until everything is set.
  • Once set, slice into bite sized pieces and serve immediately.
  • Store any leftovers in an air-tight container in the fridge for up to five days.

This recipe is super simple and easy to prepare. I recommend storing it in the fridge and just putting out a few pieces at a time as it does tend to melt a bit. Otherwise, this makes a delicious holiday treat and is one we have really come to enjoy.
