Easy to grab snacks are an essential in our home. We have a toddler with a big appetite and ready-made snacks save us on a daily basis. These Chocolate Strawberry Mini Muffins are so delicious, easy to make, and are just really pretty! I made them with H in mind, but honestly, Cole and I loved them just as much as he did.

This recipe is easy to make and tastes great. These mini muffins are great packed in lunches or make a great pre-dinner snack. They’re pretty, moist, and perfectly sweet. The muffins pack great for an on-the-go snack and are quite decadent while still being good for younger palates.

Ingredients

1/3 cup butter, melted
1/2 cup granulated sugar
1 large egg
1/2 cup cold milk
1 1/2 cups all-purpose flour
1 1/2 tsp baking powder
1/2 cup diced strawberries
1/3 cup mini chocolate chips

How to Make Chocolate Strawberry Mini Muffins

Preheat the oven to 350ºF.

Grease a mini muffin tin and set aside.

In a large bowl, cream together the melted butter and sugar.

Add in the egg, mixing until well combined.

Next, add in the flour and baking powder.

Add in the milk and mix everything until well combined.

Fold in the diced strawberries and mini chocolate chips until just combined.

Fill the muffin tin with batter, dividing it evenly amongst the 24 cups. (Cups will be full)

Bake for 14-16 minutes.

Let cool before serving.

How to Serve

These little muffins are great on their own as a little snack. They also work well for breakfast alongside some eggs!

How to Store

These muffins can be stored up to 5 days in an air-tight container or in the freezer for up to 3 months.
