ABC (apple, banana, and carrot) mini muffins are a favourite over here now that fall has set in. They make the perfect toddler-friendly snack; but I’ve also been enjoying them with my coffee on occasion too!

These mini muffins have no added sugar, which makes them ideal for little ones but they’re still delicious enough that you’ll want to sneak a couple too. They use seasonal flavours like apple and carrot so they feel seasonal and are easy to make.
What You’ll Need:
2-3 mashed bananas
1 apple, shredded
1 carrot, shredded
3/4 cup milk
1/4 cup butter, melted
1 large egg
1 tsp vanilla extract
1 cup all-purpose flour
1/2 cup oats
1 tsp ground cinnamon
1 tsp baking powder
1/2 tsp baking soda
How to Make ABC Mini Muffins
Preheat the oven to 375ºF. Grease a mini muffin pan and set aside.
In a large bowl, combine the melted butter, mashed bananas, shredded apple, shredded carrot, egg, and vanilla extract until well mixed.
Add in the cinnamon, baking powder, baking soda, and milk. Stir until well combined.
Add in the flour and oats, stirring until well combined.
Fill the mini muffin pan with batter and bake 18-20 minutes.
Let cool before serving.
Notes + Tips
These muffins save well in an airtight container on the counter for up to 4 days or in the freezer for 3+ months. I typically use 2% milk for these muffins as it’s what I most commonly have on hand, but you can substitute for your favourite milk.
