Only in the last year or two have I started putting fruit in my salad. The combination seemed strange and unappealing to me, but boy was I missing out! I had a variation of this Berry Balsamic salad from a grocery store back in the summer. I loved it then and when I received Kale in my Odd Bunch order last week, I knew I had to try recreating it at home! This salad is really simple and makes a great side salad. You could also add some chicken or walnuts to give it some protein and make it more of a meal.
I personally loved this salad on the side of my lunch but definitely want to try it with some grilled chicken for future lunches! It has so much flavour and tastes so fresh. It also only requires a few ingredients, which is always nice. All you need is some kale, berries of your choice (I used a blend of strawberries, blueberries, and blackberries), some diced red onion, and a balsamic dressing.

Berry Balsamic Salad
Ingredients
- 2 cups chopped kale
- 1 cup mixed berries
- 2 tbsp red onion, diced
- 2 tbsp balsamic dressing
Instructions
- Combine all ingredients into a bowl and toss until well combined. Serve immediately and enjoy!
I actually made this salad yesterday to go alongside pizza for lunch. My mom and I both really enjoyed it and I knew I had to share the recipe before holiday content starts taking over! This salad is simple yet elegant and is really beautiful. It’s one of those dishes that looks impressive but is actually really easy to throw together.
