These Chocolate Strawberry Mini Muffins are so delicious, easy to make, and are just really pretty! I made them with H in mind, but honestly, Cole and I loved them just as much as he did.

Ingredients
1/3 cup butter, melted
1/2 cup granulated sugar
1 large egg
1/2 cup cold milk
1 1/2 cups all-purpose flour
1 1/2 tsp baking powder
1/2 cup diced strawberries
1/3 cup mini chocolate chips
How to Make Chocolate Strawberry Mini Muffins
Preheat the oven to 350ºF.
Grease a mini muffin tin and set aside.
In a large bowl, cream together the melted butter and sugar.
Add in the egg, mixing until well combined.
Next, add in the flour and baking powder.
Add in the milk and mix everything until well combined.
Fold in the diced strawberries and mini chocolate chips until just combined.
Fill the muffin tin with batter, dividing it evenly amongst the 24 cups. (Cups will be full)
Bake for 14-16 minutes.
Let cool before serving.

These little muffins are great on their own as a little snack. They also work well for breakfast alongside some eggs!
