My son has been obsessed with cinnamon raisin bread for months now. It’s not something I probably ever would have thought to feed him. But, I noticed he had been eating it at daycare and requesting more, so I started buying it. It has quickly become one of his favourite foods! I decided to try making my own based on my homemade bread recipe and it turned out really well. Hudson loves it just as much as the store-bought loaf, and I love that it only has a few ingredients!
In addition to the usual flour, warm water, salt, sugar, and instant yeast; you’ll also need some brown sugar, cinnamon, and raisins. Everything else is essentially the same.
To make the bread, all you need to do is mix together 3 cups of all-purpose flour, 2 teaspoons of instant yeast (it has to be instant), 1 teaspoon of salt, 1 teaspoon of granulated sugar, 3 tablespoons of brown sugar, 2 teaspoons of cinnamon, 2/3 cups raisins, and a cup and a half of warm water in a large bowl. Then, cover the bowl with plastic wrap and let sit for at least 3 hours.
When your 3 hours are up, place your dutch oven in the oven and preheat to 450°F. Once it’s heated up, leave your dutch oven in for another 15-20 minutes to get nice and hot. Then, roll your dough into a ball, pop it in the dutch oven and bake (covered) for 30 minutes and then uncovered for another 10. You then have the most delicious loaf of bread!
This recipe is super simple and really isn’t all that time consuming (aside from letting it rise). The end result is a perfectly sweet, decadent loaf of bread. We usually like to enjoy it toasted with a little butter, but it’s also great with cream cheese or even just plain.
