One of my new year’s resolutions was to start a cookbook club with my mom and sister. Last weekend we finally had our first official “meeting” and it was so much fun!
We started off using Liv B’s Vegan on a Budget cookbook as it was one we all had. We all chose a recipe to make (without telling each other) and met up at my place to share what we had prepared. Going forward we will opt to just choose a cookbook for the next meeting ahead of time so that any of us that don’t own it can take photos of what we might like to make instead of having to buy a new cookbook each month.
The first meeting was so delicious and a total success. We made the decision not to share with each other what we were going to make to keep it a fun surprise. No one ended up making the same thing; in fact we all ended up making different courses, which was so fun!
I made the Sundried Tomato and Spinach Pinwheels, which were so delicious. I’ve had this cookbook for years and have made a lot of the recipes before, but not this one which is why I wanted to give it a try. It was actually very easy and we all really enjoyed them (well, except for my niece haha). They were rich, decadent, and a lovely treat.
Next, my sister and my niece made the Macaroni and Cheese, which was also delicious. Hudson was possibly the biggest fan; but we all really enjoyed it. The macaroni and cheese was rich, creamy, and the breadcrumb topping made it really indulgent.
Lastly, my mom made us not one, but two treats! She made the Classic Chocolate Chip Cookies, which are a favourite in my family. My mom figured the kids especially would prefer them. My mom also made Tea Biscuits and brought along some strawberry jam to go with. She too wanted to make something she hadn’t before from the cookbook but figured the kids wouldn’t be as excited to try them as the adults. She was wrong though, both kids each had one cookie and wanted to try the tea biscuits! They were both such nice desserts and the perfect way to end the meal.
The food was so yummy and we had such an enjoyable afternoon together. I’m excited for next month’s meeting already!
