Fall is fast approaching, and I for one am super excited. I’m so ready to ditch these hot and humid days and start wearing cozy sweaters again! This fall harvest salad recipe is a great transition recipe and one I have been obsessed with for years! This salad is so yummy and satisfying while packing in a lot of delicious fall flavours. It has been my favourite lunch lately as it keeps me full and feeling good.
All it contains is some spring mix, roasted sweet potatoes, dried cranberries, pumpkin seeds, and goat cheese! Then for the dressing, it contains some olive oil, apple cider vinegar, honey, garlic powder, and salt. Everything is super simple yet this salad is packed with flavour!
Fall Harvest Salad
Ingredients
For the Salad:
- 4 cups spring mix
- 1 sweet potato, roasted
- 1/3 cup pumpkin seeds
- 1/4 cup dried cranberries
- 1/2 cup goat cheese, crumbled
For the Dressing:
- 1/4 cup olive oil
- 2 tbsp apple cider vinegar
- 2 tsp honey
- 1 tsp garlic powder
- 1/4 tsp salt
Instructions
- For the salad: In a large bowl, mix together the spring mix, roasted sweet potato, dried cranberries, pumpkin seeds, and goat cheese. Set aside.
- For the dressing: In a small mason jar, combine the olive oil, apple cider vinegar, honey, garlic powder, and salt. Put a lid on the jar and shake until well combined.
- Drizzle the salad dressing over the salad and serve immediately.
I really enjoy this salad because it leaves me feeling full without being too full. It’s also really pretty and I like the variety of textures and flavours. It’s a really fun one to make this time of year as it’s fresh but also uses some fun, seasonal ingredients. It makes a really great work lunch in my opinion, but can also be nice for a lighter dinner as well! I’m obsessed and hope you enjoy it too.
