Homemade peanut butter cookies were a childhood favourite of mine that has carried into adulthood. They are a comforting classic and such a delicious treat. They are also super easy to make! I whipped up a batch last weekend during what was hopefully the last winter storm we encounter for this year. They were such a nice afternoon snack and I realized that I have not yet shared my recipe. So, without further ado, here is the recipe for my classic peanut butter cookies:

Why You’ll Love This Recipe

These peanut butter cookies are easy to make, perfectly sweet, and so comforting. They are simple yet classic and so soft. They also save really well; though, they don’t usually last more than a few days around here.

Ingredients

1 cup granulated sugar
1/2 cup melted butter
1/2 cup smooth, natural peanut butter (This is my preference. If you want to use regular peanut butter, you could probably get away with 1/2 cup granulated sugar)
1 large egg
1/2 tsp vanilla extract
1 tsp baking soda
1 1/2 cups all-purpose flour

How to Make Peanut Butter Cookies

Preheat the oven to 350ºF.

Line a baking sheet with parchment paper and set aside.

In a large bowl, cream together the melted butter and sugar.

Add in the egg, peanut butter, and vanilla extract, mixing until well combined.

Slowly mix in the baking soda and flour, stirring until well combined.

Using a cookie scoop, place dough onto baking sheet (or about 1.5 tablespoons worth).

Push down gently on each cookie to flatten it.

Using a fork, press down gently on the cookies to create the criss-cross effect.

Bake cookies for 9-12 minutes.

Let cool for 5-10 minutes before transferring to a wire rack to continue cooling.

How to Serve

Honestly, these cookies are great on their own or perhaps alongside a coffee. They are also really delicious served with a scoop of vanilla ice cream on top if you’re looking for something a little more decadent.

How to Store

These peanut butter cookies store well in an air-tight container for up to a week.

  • Push down gently on each cookie with a glass or the palm of your hand to flatten it.
  • Using a fork, press down gently on the cookies to create a criss-cross effect.
  • Bake cookies for 9-12 minutes.
  • Let cool 5-10 minutes before transferring to a wire rack to continue cooling.
