Rigatoni is a staple in our home. The boys especially love it and it’s so easy to make! It is hardy, delicious, and quick to get on the table. It’s a weeknight go-to for me and has been since before having H.
Growing up I was not a fan of meat sauce. It actually wasn’t until I met Cole that I even entertained the idea of trying it again. He really loves it though, so I decided to try it again. I was pleasantly surprised that my tastes had changed and that it was something I enjoyed. Since then it has become a dinner we enjoy together pretty frequently.
To make it, all you need are some diced veggies (onion, mushrooms, and green pepper are our favourites), a jar of your favourite pasta sauce, some rigatoni noodles, and a pound of lean ground beef. The ground beef and diced vegetables get sautéed in olive oil until the meat is brown. Then the sauce gets mixed in and everything gets poured over cooked rigatoni. It’s simple, filling, and yummy.
Rigatoni
Ingredients
- 1 tbsp olive oil
- 1 small onion, diced
- 1 green pepper, diced
- 1/2 cup mushrooms, diced
- 1 lb lean ground beef
- 1 jar of pasta sauce
- 1 lb rigatoni pasta
Instructions
- Cook pasta according to package directions and set aside.
- In a frying pan over medium heat, sauté the diced onion, green pepper, and mushrooms for 3-5 minutes.
- Then, add in the ground beef and continue cooking until brown.
- Add in the pasta sauce, stirring until well combined.
- Let simmer for 2-3 minutes and then pour over the cooked rigatoni. Enjoy!
This recipe is one of my go-to favourites when I’m short on time or don’t feel like cooking. It keeps us full and it’s an easy way for me to get the boys to eat more vegetables. I typically serve it in addition to a caesar salad and often some homemade garlic bread, We also always have leftover rigatoni which is great for lunches the next day!
