I’m back with another soup recipe! Today is all about my Roasted Cauliflower + Cheddar Soup. It’s creamy, cozy, and super easy to make. Paired with a nice loaf of bread, this soup makes the perfect fall meal in my opinion.
To create this yourself, you’ll need: a head of cauliflower, 10-15 cloves of garlic (yes, that’s right), some olive oil, an onion, some chicken broth, salt and pepper, cheddar cheese, and milk. The cauliflower, onion, and garlic all get roasted in the olive oil, salt, and pepper. Then, add them along with the chicken broth and milk to a blender. Blend for about a minute and add to a large pot. Bring to a simmer and mix in the shredded cheese. Continue to let simmer for about 15 minutes and serve!
Roasted Cauliflower + Cheddar Soup
Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 1 head of cauliflower, chopped
- 10-15 cloves of garlic, peeled
- salt and pepper, to taste
- 3 cups chicken broth
- 1 cup milk
- 1 cup cheddar cheese, shredded
Instructions
- Preheat the oven to 400ºF.
- Line a baking sheet with parchment paper. Place your diced onion, chopped cauliflower, and peeled garlic cloves on top. Drizzle with olive oil, salt, and pepper.
- Bake for 30-35 minutes, flipping halfway through.
- Once the veggies are done roasting, add them to a blender. Pour in your milk and chicken broth. Blend until smooth (about a minute).
- Pour the soup into a large pot and bring to a boil. Turn down heat to a low simmer and mix in the shredded cheese.
- Let simmer for 15 minutes and then serve!
This soup is so decadent and comforting. The garlic really elevates it and the end result is so delicious. We all really enjoy this soup recipe and it’s great for busy nights when you just want something warm and simple. The leftovers heat up well too for lunch the next day, which is always appreciated in my books.
This Roasted Cauliflower + Cheddar Soup is a must-try, even if you don’t particularly like cauliflower. Getting my guys to eat it on its own is no easy feat, but they both enjoyed this soup. The garlic and the cheddar really take over in this recipe, so definitely don’t let the cauliflower deter you from giving it a try. It’s so good and I think you’ll really enjoy it!
