These simple roasted sweet potatoes are a go-to in our home. We eat them as a side, in salads, etc. and so I figured they deserved a spot on the website. They aren’t anything fancy by any means, but rather one of those tried and true staples that we eat often.

These sweet potatoes are so versatile and delicious! They go with all sorts of dishes and are something we make a lot.

Ingredients

1 sweet potato, peeled and chopped
1 tbsp olive oil
2 tsp garlic powder
1/4 tsp salt

How to Make Simple Roasted Sweet Potatoes

All I do is chop up a sweet potato (or two), drizzle in olive oil, and sprinkle with salt and garlic powder. They go into the oven and we’re left with delicious sweet potatoes that go with anything!

How to Serve

As I mentioned, these roasted sweet potatoes are so versatile! They make a great side dish to accompany almost any dinner but are also great in salads too.

How to Store

Any leftover sweet potatoes can be stored in the refrigerator in an air-tight container for up to 5 days. Simply reheat when you’re ready.

Ingredients

  • 1 tbsp olive oil
  • 1 sweet potato, peeled and chopped
  • 2 tsp garlic powder
  • 1/4 tsp salt

Instructions

  • Preheat the oven to 425ºF.
  • Line a baking sheet with parchment paper and set aside.
  • In a medium bowl, toss your chopped sweet potato with the olive oil, garlic powder, and salt until evenly coated.
  • Place the sweet potatoes on the baking sheet and bake for 30-35 minutes.
