Mornings are a lot busier around here now that I’m back to working outside of the home full time! Breakfast for me is easy to overlook in an attempt to save time, so I have been relying on overnight oats to ensure I’m fueling my body each morning and these vanilla latte overnight oats are my current favourite!
I make these in the evening once I’ve got H down for bed and they’re ready when I am in the morning. The recipe is super easy and I find I can make two or three of them up ahead of time to save even more time. They’re the perfect amount of sweet and I love the little caffeine boost.
In a jar, combine your oats, milk, brewed coffee, peanut butter, honey, vanilla extract, salt, and chia seeds. Give everything a good mix, cover, and refrigerate overnight. That’s it! It’s so simple and these overnight oats make the perfect summer breakfast.
Vanilla Latte Overnight Oats
Ingredients
- 1/2 cup rolled oats
- 1/2 cup milk
- 1 tsp vanilla extract
- 2 tbsp brewed coffee
- 2 tsp natural peanut butter
- 2 tsp honey
- a pinch of salt
- 1 tsp chia seeds
Instructions
- Combine all ingredients in a jar and mix really well.
- Cover and refrigerate overnight.
- Enjoy in the morning!
