These barbecue buddha bowls are the perfect dinner for those busy weeknights. These have been a favourite in our home for years now and were inspired by one of our favourite menu items at Freshii. I’m so excited to share the recipe with you!

These bowls involve basically no cooking and come together in roughly ten minutes! They’re full of flavour and packed with nutrients, so you can feel good about what you’re eating.

Ingredients

1 cup cooked rice
19 oz can black beans, drained and rinsed
2/3 cup steamed broccoli
1/4 cup mozzarella cheese, shredded
1/3 avocado, sliced
1/2 cup tomatoes, diced
4 tbsp barbecue sauce

How to Make Barbecue Buddha Bowls

In a large bowl, add some cooked rice, black beans, steamed broccoli, shredded mozzarella cheese, avocado slices, and diced tomatoes. Drizzle everything with a little barbecue sauce and dinner is served!

Ingredients

  • 1 cup cooked rice
  • 19 oz can black beans, drained and rinsed

  • 4 tbps barbecue sauce

Instructions

  • In two dinner bowls, evenly divide the cooked rice, steamed broccoli, black beans, sliced avocado, shredded mozzarella cheese, and diced tomatoes.
  • Drizzle each bowl with two tablespoons of barbecue sauce and serve immediately.

This recipe is super simple and healthy. And, since it comes together in no time, it’s our go-to on nights I’ve forgotten to defrost something but we don’t want to order takeout. I almost always have all of the ingredients on hand, but you can also easily customize the bowl to fit your tastes or what you have in your kitchen.
