These barbecue buddha bowls are the perfect dinner for those busy weeknights. They involve basically no cooking and come together in roughly ten minutes! They’re full of flavour and packed with nutrients, so you can feel good about what you’re eating.
In a large bowl, add some cooked rice, black beans, steamed broccoli, shredded mozzarella cheese, avocado slices, and diced tomatoes. Drizzle everything with a little barbecue sauce and dinner is served!
Barbecue Buddha Bowl
Ingredients
- 1 cup cooked rice
- 19 oz can black beans, drained and rinsed
- 2/3 cup steamed broccoli
- 1/4 cup mozzarella cheese, shredded
- 1/3 avocado, sliced
- 1/2 cup tomatoes, diced
- 4 tbps barbecue sauce
Instructions
- In two dinner bowls, evenly divide the cooked rice, steamed broccoli, black beans, sliced avocado, shredded mozzarella cheese, and diced tomatoes.
- Drizzle each bowl with two tablespoons of barbecue sauce and serve immediately.
This recipe is super simple and healthy. And, since it comes together in no time, it’s our go-to on nights I’ve forgotten to defrost something but we don’t want to order takeout.
