Ingredients
275 gram bag of tortilla chips
1 cup salsa
1 cup queso
1.5 cups mozzarella cheese, shredded
1-2 chicken breasts, barbecued and shredded
1/4 cup pickled jalapeños
1/2 cup diced red onion
How to Make Barbecue Chicken Nachos
Preheat the oven to 400ºF.
Line a baking sheet with parchment paper.
Arrange the tortilla chips on the baking sheet so that the whole tray is evenly covered.
Pour the salsa and queso over the chips evenly. You may need to use a spoon to spread things out evenly.
Sprinkle the shredded mozzarella over the tortilla chips.
Top the nachos with the barbecue chicken, pickled jalapeños, and red onion.
Bake in the oven for 12-15 minutes.
Let cool before serving with sour cream and guacamole.

These nachos are best served right away while they’re still warm from the oven. While great on their own, they pair nicely with sour cream and guacamole for dipping, also.

This dish really shines when it’s made and consumed on the same day. That being said, leftovers can be stored in an air tight container in the fridge for 2-3 days. Of note, it’s better to reheat in the oven as opposed to the microwave to eliminate sogginess, but you’re still going to have a bit of that unfortunately.
