Barbecue Chicken Nachos

Ingredients

  • 275 g bag of tortilla chips
  • 1 cup salsa
  • 1 cup queso
  • 1.5 cups mozzarella cheese, shredded
  • 1-2 chicken breasts, barbecued and shredded
  • 1/2 cup pickled jalapeños
  • 1/2 cup red onion, diced
  • sour cream and/or guacamole, to serve

Instructions

  • Preheat the oven to 400ºF.
  • Line a baking sheet with parchment paper.
  • Arrange the tortilla chips on the baking sheet so that the whole tray is evenly covered.
  • Pour the salsa and queso over the chips evenly. You may need to use a spoon to spread things out evenly.
  • Sprinkle the shredded mozzarella over the tortilla chips.
  • Top the nachos with the barbecue chicken, pickled jalapeños, and red onion. 
  • Bake in the oven for 12-15 minutes.
  • Let cool before serving with sour cream and guacamole.
