Last fall I attempted to make homemade beef stew and it quickly became one of our favourite meals. It’s easy enough to make, tastes delicious, and is hearty. Previously we only ever had beef stew from a can, but since making it myself we have never gone back! It takes longer to make, but it is SO worth the wait.
In a dutch oven or large pot, drizzle in some olive oil and start sautéing an onion. Add in some stewing beef, garlic powder, flour, and salt. Once the beef is mostly cooked through, add in some chopped veggies. Let them cook for 5-10 minutes. Then, add in some beef broth, tomato paste, Worcestershire sauce, and a couple of bay leaves. Let everything simmer for about 20 minutes before taking the stew off the heat. Let cool for 5-10 minutes and serve.
Beef Stew
Ingredients
- 2 lbs stewing beef
- 1 tsp salt
- 1 tbsp garlic powder
- 1 tbsp olive oil
- 1 small onion, diced
- 2 carrots, peeled and cut into 1 inch pieces
- 3 potatoes, diced
- 1 cup green beans, chopped
- 2 tbsp tomato paste
- 4 cups beef broth
- 1 tbsp Worcestershire sauce
- 2 tbsp all-purpose flour or cornstarch
- 2 bay leaves
Instructions
- In a dutch oven or large pot over medium heat, add in the olive oil and start sautéing the onion.
- Add in the stewing beef, salt, and garlic powder. Add in the flour and toss the beef until coated. Brown the beef, until mostly cooked.
- Add in the potatoes, carrots, and green beans. Let cook for 5-10 minutes.
- Mix in the beef broth, tomato paste, Worcestershire sauce, and bay leaves.
- Bring the mixture to a simmer.
- Let simmer for 30-40 minutes until the beef is very tender.
- Remove from heat and let cool 5-10 minutes before serving warm.
I prefer using fresh vegetables, but canned or frozen work just fine. You can also play around with the veggies you put in; this is just what our family prefers.
This is the ultimate comfort food to me this time of year. This beef stew recipe is really simple but so yummy and one we all enjoy. The leftovers make a great lunch for the next day, too!
