I have been making these Birthday Cake Chocolate Chip Cookies for at least a decade now. They’re so delicious and always a hit whenever I make them. I decided to make them again recently but using Christmas sprinkles to give them a festive twist. These aren’t really a holiday cookie per se, but they look the part and are so delicious. I guarantee they will be a welcome addition to your Christmas gatherings this year!
You’ll need a handful of ingredients to make these cookies. Butter, granulated sugar, brown sugar, an egg, vanilla extract, baking powder, flour, vanilla cake mix, chocolate chips, white chocolate chips, and sprinkles. Everything gets mixed together and put into the fridge for at least 2 hours to chill. After that, the dough gets scooped onto baking sheets and into the oven for 10-12 minutes.
Birthday Cake Chocolate Chip Cookies
Ingredients
- 3/4 Cup Melted Butter
- 1/2 Cup Brown Sugar
- 1/2 Cup Granulated Sugar
- 1 Egg
- 1 Tsp Vanilla Extract
- 1/2 Tsp Baking Soda
- 1/4 Tsp Salt
- 1 1/4 Cups All-Purpose Flour
- 1 1/4 Cups Vanilla Cake Mix
- 1/2 Cup Sprinkles
- 1/2 Cup Chocolate Chips
- 1/2 Cup White Chocolate Chips
Instructions
- In a large bowl, cream together the melted butter and sugars.
- Mix in the egg and vanilla extract, stirring until well combined.
- Stir in the salt and baking soda until well combined.
- Slowly mix in the flour and cake mix until well combined.
- Fold in the sprinkles and both kinds of chocolate chips until just incorporated.
- Cover the bowl with plastic wrap and refrigerate for at least two hours.
- After the 2 hours is up, preheat the oven to 350.
- Scoop the dough onto a baking sheet lined with parchment paper and bake for 10-12 minutes.
- Let the cookies cool for 5-10 minutes before transferring to a wire rack to continue cooling.
These cookies are so soft, moist, and delicious. They look fun with the sprinkles but even adults will enjoy them. They’re sweet and the vanilla cake mix really gives them a nice flavour and texture in my opinion.
If you’re making these ahead, these cookies will save for 5-7 days in an air-tight container. They also freeze really well too!
