While I love to cook, cooking chicken has never been one of my favourite things to make. The cooking process tends to gross me out if I’m honest, but I do like to eat it. A few months ago, I developed this recipe for Blackened Chicken involving my cast iron skillet and have rarely made chicken any other way since! It’s full of flavour, juicy, and reheats well for meal prep. It’s really easy to make and tastes really, really good.

Not only is my Blackened Chicken recipe easy to make, but it’s also really delicious. If you too aren’t a huge fan of cooking chicken either, you’ll appreciate that most of the cook time is spent in the oven. You only need a few ingredients and around 40 minutes from start to finish.
Ingredients
1 lb boneless, skinless chicken breasts
2 tbsp olive oil
1 tbsp garlic powder
2 tbsp cajun seasoning
2 tsp onion powder
salt + pepper, to taste
How to Make Blackened Chicken
Preheat the oven to 400ºF.
Heat a cast iron skillet over medium heat.
In a large bowl, combine the chicken breasts, olive oil, and spices. Toss until the chicken breasts are evenly coated.
Once the cast iron skillet is hot, add the coated chicken breasts. Sear each side for 5 minutes.
Place the cast iron skillet in the preheated oven and bake for 28-35 minutes.
Let cool 5 minutes before serving.
How to Serve
I have mainly been making this recipe as part of my weekly meal prep for lunches. I shred the chicken and store it in an air-tight container for the week and add it alongside quinoa and veggies or as part of a salad. Recently, I incorporated it in a pasta dish for dinner as well, which was really good. It’s very versatile and can be used however you enjoy chicken.
How to Store
As I mentioned, this chicken stores really well! In an air-tight container in the fridge, we have enjoyed it up to one week.
