
This is a recipe that I can’t believe I haven’t shared sooner! I have been making this Broccoli + Cheddar Rice with Blackened Chicken since Cole and I first met (seven years ago). It quickly became one of his favourite dinners and I’ve shared the recipe with lots of friends and family over the years, but never on the blog! It’s such an easy, comforting meal that we have enjoyed for so long now.

This is one of those rich, comforting dishes that tastes so good. It’s quick to make (especially if you use leftover chicken) and one the whole family loves. Hudson is a big fan and I know my sister’s kids enjoy it too, making it a great weeknight dinner everyone is going to love.
Ingredients
3 cups chicken broth
3 cups minute rice
2 tsp garlic powder
1 broccoli crown, chopped
400 grams cheddar cheese, grated (a standard size block of cheese)
1 lb boneless, skinless chicken breast, blackened (my recipe for that here)
How to Make Broccoli + Cheddar Rice with Blackened Chicken
Cook your chicken and set aside.
In a large pot, bring the chicken broth to a boil.
Stir in the minute rice and remove from heat. Keep covered and let sit for five minutes.
In another pot, bring the broccoli to a boil and let cook for three minutes.
When the broccoli has finished cooking, drain and add to the pot with the rice.
Add the cheese, garlic powder, and cooked chicken to the pot as well.
Stir everything well and cover for an additional 5-10 minutes so that the cheese melts.
Give everything a final stir and serve immediately.
Notes + Tips
While our family prefers using blackened chicken, any cooked chicken will work well here. You can also cook the rice in water as per the package directions, but cooking it in broth gives it a bit more flavour!
This Broccoli + Cheddar Rice with Blackened Chicken is a family favourite and my favourite way to use up leftover chicken. It’s the perfect weeknight dinner and while it’s not the most photogenic, it tastes incredible.
