Broccoli + Cheddar Rice with Blackened Chicken

Ingredients

  • 3 cups chicken broth
  • 3 cups minute rice
  • 2 tsp garlic powder
  • 1 broccoli crown, chopped
  • 400 grams cheddar cheese, shredded
  • 1 lb boneless, skinless chicken breast, blackened

Instructions

  • Cook your chicken and set aside.
  • In a large pot, bring the chicken broth to a boil.
  • Stir in the minute rice and remove from heat. Keep covered and let sit for five minutes.
  • In another pot, bring the broccoli to a boil and let cook for three minutes.
  • When the broccoli has finished cooking, drain and add to the pot with the rice.
  • Add the cheese, garlic powder, and cooked chicken to the pot as well.
  • Stir everything well and cover for an additional 5-10 minutes so that the cheese melts.
  • Give everything a final stir and serve immediately.
