
Chocolate Zucchini Loaf Cake is one of my favourite ways to use up excess zucchini. It’s so delicious and an easy way to sneak more veggies into your day. This particular recipe is always a hit when I make it and is so simple to make!

Ingredients
1/4 cup melted butter
1/4 cup canola oil
3/4 cup brown sugar
1 tsp vanilla
2 eggs
1 1/2 cups shredded zucchini
1 cup flour
1/2 cup cocoa powder
1 tsp baking soda
1/2 tsp salt
1 cup chocolate chips
How to Make Chocolate Zucchini Loaf Cake
Preheat the oven to 350ºF.
Grease a loaf pan and set aside.
In a large bowl, cream together the melted butter and brown sugar.
Mix in the eggs, oil, and vanilla extract until well combined.
Next, add in the cocoa powder, salt, and baking soda, stirring until well combined.
Using a paper towel, squeeze out any excess moisture from the zucchini and add it to the bowl, stirring until well combined.
Mix in the flour until well combined.
Fold in the chocolate chips.
Pour the batter into the loaf pan and bake from 50-60 minutes. Let cool before slicing and serving.
How to Serve
Just slice this loaf cake serve on its own for a decadent snack! I personally enjoy it with a cup of coffee for an afternoon treat.
How to Store
This loaf will save in an air-tight container for up to 5 days. With it containing zucchini, I don’t recommend freezing it as it might get a little watery.
