Chocolate Zucchini Loaf Cake

Ingredients

  • 1/4 cup melted butter
  • 3/4 cup brown sugar
  • 1/4 cup canola oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups shredded zucchini
  • 1 tsp baking soda
  • 1/2 cup cocoa powder
  • 1 cup flour
  • 1/2 tsp salt
  • 1 cup chocolate chips

Instructions

  • Preheat the oven to 350ºF.
  • Grease a loaf pan and set aside.
  • In a large bowl, cream together the melted butter and brown sugar.
  • Mix in the eggs, oil, and vanilla extract until well combined.
  • Next, add in the cocoa powder, salt, and baking soda, stirring until well combined.
  • Using a paper towel, squeeze out any excess moisture from the zucchini and add it to the bowl, stirring until well combined.
  • Mix in the flour until well combined.
  • Fold in the chocolate chips.
  • Pour the batter into the loaf pan and bake from 50-60 minutes. Let cool before slicing and serving.
