My Classic Meatloaf has quickly become a favourite in our home. I only started making it in the last couple of months, but we are obsessed and I think you will be too! Cole and I were talking one night about how we both liked meatloaf as kids when it occurred to me that I had never attempted to make it for us. After a few attempts I have finally got it right and I’m excited to share this recipe with you.
You’ll need ground beef, onion, an egg, ketchup, summer savory, Worchestire sauce, and breadcrumbs. Everything gets mixed together, topped with a glaze made from additional ketchup and Worchestire sauce, and transferred to a loaf pan. It then bakes for an hour. It’s so important to let the meatloaf sit for 10ish minutes before slicing and serving. It needs time out of the oven to cool first or else I find it falls apart.
Classic Meatloaf
Ingredients
- 1 lb lean ground beef
- 1 egg
- 1/4 cup + 2 tbsp ketchup
- 1/2 cup panko breadcrumbs
- 1 tsp summer savoury
- 1/2 onion, diced
- 4 tsp worcestershire sauce
Instructions
- Preheat the oven to 350ºF.
- Grease a loaf pan and set aside.
- In a large bowl, combine the ground beef, egg, 1/4 cup ketchup, the breadcrumbs, summer savoury, onion, and two teaspoons of the worcestershire sauce. Mix until well combined.
- Place the mixture into the loaf pan and press down so it is evenly in the pan.
- In a small bowl, mix together the remaining two tablespoons of ketchup and two teaspoons of worcestershire sauce. Use a basting brush to evenly coat the top of the meatloaf.
- Bake the meatloaf for 55-60 minutes.
- Let cool for 10-15 minutes before slicing and serving.
This meatloaf recipe is a hit in our home and I love how easy it is to assemble. We typically enjoy it with garlic mashed potatoes and either a salad or cooked vegetable. It is one of my favourite dinners for these chilly evenings we have been having as it’s comforting and hearty.
The leftovers save really well too and make a great next day lunch either on a sandwich or alongside extra mashed potatoes and vegetables.
If you’re looking for a filling, easy to make dinner, I can’t recommend this classic meatloaf recipe enough!
