It’s Sunday, which means I’m back with another soup recipe! Today I’m sharing how to make my cozy lasagna soup. This recipe is hearty, delicious, and comforting. It’s as tasty as the real deal but a bit easier to throw together. We are big fans and I think you’ll love it too.
To make the soup you’ll need: olive oil, an onion, some ground beef, garlic powder, oregano, salt, a can of diced tomatoes, a jar of spaghetti sauce, some tomato paste, chicken broth, and lasagna noodles. You’ll also want to have some ricotta, shredded mozzarella, and parsley to top with.

Cozy Lasagna Soup
Ingredients
For the Soup:
- 1 onion, diced
- 1 tbsp olive oil
- 1 lb lean ground beef
- 1 tbsp garlic powder
- 1 tsp oregano
- 1/2 tsp salt
- 1 600ml jar of spaghetti sauce
- 1 19oz can of diced tomatoes (not drained)
- 1/4 cup tomato paste
- 4 cups chicken broth
- 5-6 lasagna noodles, broken into pieces
To Top:
- ricotta cheese
- mozzarella cheese, shredded
- parsley (fresh or dried)
Instructions
- In a large pot over medium heat, sauté the onion in the olive oil until it starts to become translucent.
- Add in the lean ground beef, garlic powder, salt, and oregano. Brown the beef and drain excess fat if necessary.
- Add in the spaghetti sauce, canned tomatoes, and tomato paste. Stir until well combined.
- Add in the chicken broth and bring to a boil.
- Add in the broken lasagna noodles and cook according to package directions. (approximately 12-14 minutes)
- Serve the soup in bowls and top with ricotta cheese, shredded mozzarella, and parsley.
This soup really is so delicious! Its rich flavours make it so comforting on a cold fall or winter day.
Some things to note: while I do typically use broken lasagna noodles, any pasta will work and give you the same flavour. You can also choose to mix in the ricotta cheese and mozzarella to the whole soup and serve it that way, I just prefer to top each bowl individually based on personal preference.
