Ingredients

4–5 sausages, sliced (use your favourite—chicken, pork, plant-based, whatever you love)

1 tbsp canola oil

1 zucchini, diced

1 pint cherry tomatoes, halved

Salt and pepper, to taste

1 tsp garlic powder

1 herb and garlic Boursin cheese round

2 cups orzo
-
1.5 cups chicken broth
How to Make One Pot Garden Veggie + Boursin Orzo
In a large pot or deep skillet, heat the oil over medium heat. Add the sliced sausages and brown them until they’re golden and a little crispy on the edges.
Toss in the zucchini and cherry tomatoes, season with salt, pepper, and garlic powder, and let everything cook down until the veggies are tender and the tomatoes start to burst.
Make a hole in the center of the pot and place the round of Boursin inside.
Sprinkle the orzo in around the outside perimeter of the pot. Then, pour in the chicken broth.
Cover and let everything simmer for 10-12 minutes.
Remove the lid and give everything a good stir until well combined.
Serve and enjoy!
Notes + Tips
- This dish is full of flavour on it’s own, but some crushed red pepper flakes can be a welcome addition if you like a bit of heat.
- Any leftovers save really well in the fridge in an air-tight container.
