Happy Thanksgiving to my Canadian readers! We have been having such a restful weekend with lots of family time. I hope your weekend has been just as enjoyable! I wanted to share another yummy fall recipe with you today. I developed this pumpkin french toast recipe last year when I was on maternity leave and it has become a fall staple for us. It’s a good seasonal recipe and a fun way to use up any extra pumpkin you have hanging around.

You’ll need: eggs, pumpkin puree, pumpkin pie spice, milk, vanilla extract, and bread to make this recipe. It’s really simple but very decadent.

Ingredients

  • 4 eggs
  • 1/2 cup pumpkin puree
  • 3/4 cup milk
  • 1 tbsp pumpkin pie spice
  • 1 tsp vanilla extract
  • 12 slices of bread (thick bread works best here)

Instructions

  • Preheat your frying pan over medium heat and grease with a little butter or coconut oil.
  • In a large bowl, whisk together the eggs, milk, pumpkin puree, pumpkin pie spice, and vanilla extract.
  • Dip a slice of bread into the pumpkin mixture, making sure it's evenly coated on both sides.
  • Transfer to the hot frying pan and cook 4-5 minutes per side or until golden brown.
  • Transfer to a plate and repeat the process until done.
  • Serve with butter, maple syrup, and a dusting of icing sugar. Enjoy!

 

This french toast recipe is the perfect way to make fall breakfasts a little more special. We typically do pancakes for breakfast on Sunday morning, but I’m excited to switch them out for this pumpkin french toast next weekend! The end result is a delicious breakfast that is warm, perfectly sweet, and comforting. Any leftovers save pretty well in my opinion and can be easily heated up the next day.

This is such a fun, seasonal recipe that is so delicious! It’s really no more trouble than traditional french toast and is well worth the extra effort in the morning. Let me know if you decide to give my pumpkin french toast a try!
