Happy Thanksgiving to my Canadian readers! We have been having such a restful weekend with lots of family time. I hope your weekend has been just as enjoyable! I wanted to share another yummy fall recipe with you today. I developed this pumpkin french toast recipe last year when I was on maternity leave and it has become a fall staple for us. It’s a good seasonal recipe and a fun way to use up any extra pumpkin you have hanging around.
You’ll need: eggs, pumpkin puree, pumpkin pie spice, milk, vanilla extract, and bread to make this recipe. It’s really simple but very decadent.
Pumpkin French Toast
Ingredients
- 4 eggs
- 1/2 cup pumpkin puree
- 3/4 cup milk
- 1 tbsp pumpkin pie spice
- 1 tsp vanilla extract
- 12 slices of bread (thick bread works best here)
Instructions
- Preheat your frying pan over medium heat and grease with a little butter or coconut oil.
- In a large bowl, whisk together the eggs, milk, pumpkin puree, pumpkin pie spice, and vanilla extract.
- Dip a slice of bread into the pumpkin mixture, making sure it's evenly coated on both sides.
- Transfer to the hot frying pan and cook 4-5 minutes per side or until golden brown.
- Transfer to a plate and repeat the process until done.
- Serve with butter, maple syrup, and a dusting of icing sugar. Enjoy!
This french toast recipe is the perfect way to make fall breakfasts a little more special. We typically do pancakes for breakfast on Sunday morning, but I’m excited to switch them out for this pumpkin french toast next weekend! The end result is a delicious breakfast that is warm, perfectly sweet, and comforting. Any leftovers save pretty well in my opinion and can be easily heated up the next day.
