Preheat your frying pan over medium heat and grease with a little butter or coconut oil.
In a large bowl, whisk together the eggs, milk, pumpkin puree, pumpkin pie spice, and vanilla extract.
Dip a slice of bread into the pumpkin mixture, making sure it's evenly coated on both sides.
Transfer to the hot frying pan and cook 4-5 minutes per side or until golden brown.
Transfer to a plate and repeat the process until done.
Serve with butter, maple syrup, and a dusting of icing sugar. Enjoy!
