Ingredients
1 cup canned pumpkin
1 1/2 cups all-purpose flour
1/4 cup milk
2 eggs
2/3 cup brown sugar
1/4 tsp pumpkin pie spice
1/4 tsp salt
1/2 tsp cinnamon
1/2 tsp baking powder
1/2 tsp baking soda
1/4 cup pumpkin seeds
How to Make Pumpkin Loaf
All you need to do is mix together some canned pumpkin, milk, eggs, and brown sugar until well combined. Then slowly mix in some salt, cinnamon, baking soda, baking powder, cinnamon, pumpkin pie spice, and flour. Once everything is well mixed, pour into a greased loaf pan and top with salted pumpkin seeds. Bake for about an hour and you’ll have a perfect fall treat!
How to Serve
This loaf cake is best served with a hot cup of coffee or tea. It’s great on it’s own, but you can also add some butter for an even more decadent treat.

This loaf will save well in an air-tight container on the counter for up to one week.

Pumpkin Loaf
Ingredients
- 1 cup canned pumpkin
- 1.5 cups all-purpose flour
- 1/4 cup milk
- 2 eggs
- 2/3 cup brown sugar
- 1/4 tsp pumpkin pie spice
- 1/4 tsp salt
- 1/2 tsp cinnamon
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 cup pumpkin seeds (I prefer salted, but unsalted work too)
Instructions
- Preheat the oven to 350°F.
- Grease a loaf pan and set aside.
- In a large bowl, combine the eggs, milk, pumpkin purée, and brown sugar.
- Slowly add in the cinnamon, salt, pumpkin pie spice, baking soda, baking powder, and flour until well combined.
- Pour the mixture into the loaf pan and top with pumpkin seeds.
- Bake for 55-65 minutes.
- Let cool at least 30 minutes before slicing and serving.
This recipe is one of our favourites and I hope you love it too if you decide to give it a try.
