I’m getting ready to take a little break and celebrate Thanksgiving with my family, but not without first sharing this roasted butternut squash with cranberries + feta recipe with you first! Happy Thanksgiving to all of my Canadian readers. It’s officially feeling like fall this week in southern Ontario and I for one am so happy about it. We have a couple of dinners planned and I can’t wait to recharge my batteries and spend time with loved ones.
I wanted to share this recipe though in case you’re in need of a last minute dish for Thanksgiving. It’s something a bit unique but so beautiful and delicious. I was excited to make this because of the beautiful colours but the sweet-meets-savoury result is as delicious as the dish is pretty. To my shock and delight, even the boys loved it and ate seconds the first time I made it!
All you need is a butternut squash, some fresh cranberries, feta, olive oil, salt, pepper, garlic powder, and honey. This dish is really easy to prepare but really impresses and tastes so good.

Roasted Butternut Squash with Cranberries + Feta
Ingredients
- 1 large butternut squash, peeled and chopped
- 1 tbsp olive oil
- salt and pepper, to taste
- 2 tsp garlic powder
- 1-2 cups fresh cranberries
- 2 tbsp honey
- 1/4 cup crumbled feta
Instructions
- Preheat oven for 400ºF.
- In an oven-safe baking dish, add the chopped butternut squash and toss with olive oil, salt, pepper, and garlic powder.
- Roast for 25 minutes.
- After 25 minutes, add your cranberries to the roasting pan and continue baking for 10-15 minutes until the cranberries start to burst a little.
- Remove from the oven and sprinkle in the feta.
- Drizzle with honey and serve.
I really love how easy this dish is to prepare. We initially had it with a chicken dinner and I plan to bring it along to one of the Thanksgiving dinners we’re going to this weekend. It pairs so well and is a great way to add those yummy fall flavours to your meal. I’ve also added the leftovers to a salad the next day and the results were top notch!
