Roasted Butternut Squash with Cranberries + Feta

Ingredients

  • 1 large butternut squash, peeled and chopped
  • 1 tbsp olive oil
  • salt and pepper, to taste
  • 2 tsp garlic powder
  • 1-2 cups fresh cranberries
  • 2 tbsp honey
  • 1/4 cup crumbled feta

Instructions

  • Preheat oven for 400ºF.
  • In an oven-safe baking dish, add the chopped butternut squash and toss with olive oil, salt, pepper, and garlic powder.
  • Roast for 25 minutes.
  • After 25 minutes, add your cranberries to the roasting pan and continue baking for 10-15 minutes until the cranberries start to burst a little.
  • Remove from the oven and sprinkle in the feta.
  • Drizzle with honey and serve.
