I like to make pancakes on Sunday mornings. I fell out of the routine a couple of months ago when life got busy for us, but pancake Sunday has since been reinstated and it feels so good! The slower pace of Sunday mornings coupled with a cozy stack of pancakes is a winning combination in my books. And, this recipe is my go-to!

Why You’ll Love This Recipe

This pancake recipe is really easy and doesn’t require a ton of ingredients. It makes the most delicious, fluffy pancakes. This recipe is really simple, but is also very versatile. You could add bananas, chocolate chips, berries, or whatever else you like in your pancakes to make them even more special. They are really good as is though too!

Ingredients

2 1/4 cups all-purpose flour
3 tsp baking powder
1 tsp salt
2 eggs
2 1/2 cups milk

How to Make The Best Pancakes

In a large bowl, mix together all of the ingredients. Be careful not to over mix, a few lumps are okay.

Heat and oil a skillet. Measure out 1/2 cup portions of the pancake mix and pour into the heated skillet.

Cook until little bubbles begin to form, and then flip.

Cook for an additional minute and then flip again to ensure both sides are golden brown.

Serve with maple syrup or your favourite toppings.

How to Serve

As I mentioned, you can serve these pancakes with maple syrup, which is our favourite. But, you could top with butter, fruit, whipped cream, or anything else you like! They’re great on their own, but they make a great addition to any brunch spread as well.

How to Store

These pancakes actually save pretty well in the fridge and can be heated up in the microwave or toaster another day. I will sometimes even double the recipe so we have leftover pancakes on hand for an easy breakfast option through the week!
