
Wow, it’s good to be back! This summer I spent some much needed time away from blogging to be with my family and while it was pure bliss, I’m happy to be back sharing content again.
Last week was an emotional one in our home. Cole started a new job, and H started a new daycare. Daycare drop offs are not something I have ever needed to do (Cole used to work at H’s previous daycare) and oh man are they heartbreaking! I’m sure lots of you are settling back into the fall routines of daycare, work, and school too and my heart goes out to you!
So, for my first post back, I thought it was fitting to share a comfort food classic: my White Cheddar Macaroni + Cheese.

This comfort classic is one that your kids will love, but the white cheddar adds a rich, decadent twist that parents will appreciate. It comes together in under 30 minutes too, making this is the ultimate fall meal for busy weeknights. The leftovers save really well too, which is perfect for a nice lunch the next day!
Ingredients
1 lb macaroni
1/4 cup salted butter
1/4 cup all purpose flour
2 cups milk
1/2 tsp salt
1/4 tsp pepper
1 tsp garlic powder
16 oz white cheddar, shredded
How to Make White Cheddar Macaroni + Cheese
Cook your macaroni according to package directions.
In a medium saucepan, melt your butter over medium heat.
Once it has melted, add in the all purpose flour. Whisk until a roux forms.
Slowly add in your milk, salt, pepper, and garlic powder and bring to a simmer.
Slowly fold in the cheese and stir occasionally until it melts and a cheese sauce is formed.
Add the cooked macaroni to the cheese sauce and stir until well combined.
Serve and enjoy!
Notes + Tips
While we really like the white cheddar, you can swap it out for whatever cheese your family prefers. This dish is also really good with some toasted breadcrumbs on top too if you’re looking to elevate things even more. That said, H seems to prefer it without so I usually serve it as is alongside his favourite veggie: broccoli.
