Tortilla Soup

Ingredients

  • 6 cups vegetable broth
  • 1 cup corn
  • 19 ounce can black beans, drained and rinsed
  • 19 ounce can kidney beans, drained and rinsed
  • 28 ounch can diced tomatoes
  • 1 white onion, diced
  • 3 tsp garlic powder
  • salt and pepper, to taste
  • 3 tsp chili powder
  • 1 tsp paprika

Instructions

  • Combine all ingredients in a large pot and bring to a boil.
  • Turn down and let soup simmer for 25-30 minutes.
  • Optional: serve with your favourite toppings such as sour cream, diced avocado, and/or tortilla chips
