There is something so nostalgic and comforting about a bowl of tomato soup. I recently tried to make it myself after scoring a ton of beautiful tomatoes for such a good price at a local vegetable stand and I don’t think we’ll ever go back to a can! The depth of flavour is unmatched and it really didn’t take too much added effort.

Why You’ll Love This Recipe

This recipe is pretty simple to follow and the rich, decadent flavours are so cozy. The leftovers save really well; and paired with a grilled cheese sandwich, this classic tomato soup makes the perfect lunch.

What You’ll Need

8 large tomatoes, chopped
1/3 of a sweet onion, chopped
6-8 cloves garlic, minced
2 cups chicken broth
2 tbsp butter
2 tbsp flour
2 tsp sugar
1 tsp salt

How to Make Classic Tomato Soup

In a large pot, bring the chicken broth to a boil.

Add in the tomatoes, garlic, and onion and let simmer for 20-30 minutes. 

Take everything from the pot and transfer it to a blender and blend until smooth.

While the pot is empty, you’re going to make a roux. Melt the butter in the pot. Once it’s melted, add in the flour and stir constantly until well combined.

Add the soup back into the pot with the roux and add your sugar and salt.

Bring everything back to a simmer before removing from the heat and serving.

Notes and Tips

This soup is great on its own and I wanted to share just a classic tomato soup recipe, but it would be great with some added herbs for additional flavour. Also, you can totally substitute the chicken broth for vegetable broth if you’re looking for a vegan/vegetarian option.
